Ingredients
  1. 500g beef mince
  2. ½ cup grated sweet potato
  3. 1 spring onion, finely chopped
  4. 2 tablespoons finely chopped fresh coriander
  5. 1 tablespoon tomato paste
  6. ½ red capsicum, finely diced
  7. ½ teaspoon sea salt
  8. pepper to taste
  9. coconut oil, dripping or olive oil for shallow frying
Instructions
  1. Combine all the ingredients together in a large bowl. I find it easiest to mix with clean hands (and that way you can massage a bit of love into the mixture too) 😉
  2. Heat a large frypan over medium heat and add 1 tablespoon of chosen cooking oil.
  3. Cook meatballs in batches (so not to overcrowd the pan and stew the meatballs), for approximately 8 minutes or until cooked through. Make sure you turn the meatballs regularly to brown all sides.
  4. Repeat with more cooking oil and meatballs until they are all cooked.
  5. Serve with a nice salad, or your favourite dipping sauce.
Notes
  1. These can also be made into patties and used in hamburgers. Just shape into patty shapes and cook for 4-5 minutes on each side. They will shrink a little as you cook them.
  2. Makes 6-10 patties, depending on size.
