TRAFFIC LIGHT MEATBALLS/PATTIES

PREPARATION 20 MINS • COOKING TIME 25 MINS • MAKES 40 (APPROX)
- 500g beef mince
- ½ cup grated sweet potato
- 1 spring onion, finely chopped
- 2 tablespoons finely chopped fresh coriander
- 1 tablespoon tomato paste
- ½ red capsicum, finely diced
- ½ teaspoon sea salt
- pepper to taste
- coconut oil, dripping or olive oil for shallow frying
- Combine all the ingredients together in a large bowl. I find it easiest to mix with clean hands (and that way you can massage a bit of love into the mixture too) 😉
- Heat a large frypan over medium heat and add 1 tablespoon of chosen cooking oil.
- Cook meatballs in batches (so not to overcrowd the pan and stew the meatballs), for approximately 8 minutes or until cooked through. Make sure you turn the meatballs regularly to brown all sides.
- Repeat with more cooking oil and meatballs until they are all cooked.
- Serve with a nice salad, or your favourite dipping sauce.
- These can also be made into patties and used in hamburgers. Just shape into patty shapes and cook for 4-5 minutes on each side. They will shrink a little as you cook them.
- Makes 6-10 patties, depending on size.
