Beat eggs and dextrose together with electric mixer until thick.
Add buttermilk and beat for 1 minute.
Sift the flour, bicarb soda and salt together and add to egg mixture. Beat again until mix is smooth.
Heat a non-stick frypan over medium heat and add a small knob of butter. Place spoonfuls of batter into pan. Cook until bubbles appear on surface of pikelet, then flip pikelet over and cook other side. You may need to add more butter to the pan after every few batches cooked.
*Place 1 tablespoon of white vinegar in a 1 cup measuring jug and make up to 1 cup with full cream milk. Let it sit for 5 mins then use in recipe.
