Ingredients
  1. 2 cups puffed rice
  2. 2 cups shredded coconut
  3. ¾ cup sunflower seeds/kernels
  4. ¾ cup pumpkin seeds (pepitas)
  5. ¾ cup macadamia nuts, roughly chopped
  6. ¾ cup raw cashews, roughly chopped
  7. ¼ cup chia seeds
  8. ¼ cup cacao/cocoa powder
  9. ¼ cup coconut oil
  10. ¼ cup rice malt syrup (RMS)
Instructions
  1. Preheat the oven to 180°C or 170°C fanbake. Line a large shallow baking dish with baking paper or use a non stick dish.
  2. In a large bowl, combine all of the ingredients except rice malt syrup. Spread mixture out into prepared dish, then drizzle the RMS over the mix.
  3. Place dish into oven and cook for 7 minutes. Remove from oven, stir then return to oven for a further 7 mins, and repeat once more for a total cooking time of 21 minutes.
  4. Remove from oven and allow to cool completely before transferring to an airtight container.
Notes
  1. HINT: Feel free to mix it up with whatever nuts or seeds you like and it is very filling so you might only want ½ a cup or so in one sitting (especially if you are adding cream and milk like I do 🙂 )
