BUTTER ICING

Preparation: 5-10 minutes
- 100g butter, softened
- 1 cup dextrose icing sugar
- ¼ teaspoon vanilla essence
- 1 tablespoon milk
- In a small bowl, beat butter with electric beaters until pale and fluffy.
- Gradually add icing sugar (1/4 cup at a time) and beat well after each addition.
- Add milk and beat again. Add a couple of drops of food colouring to suit if using and mix thoroughly.
- * This should be enough icing to cover my Cupcake recipe if you are just spreading the icing on with a knife. If you are doing fancy piping with the icing, you may want to double the recipe.
- To make a chocolate version, add 1 tablespoon of sifted cocoa powder in with the icing sugar.
