Ingredients
  1. 200g butter, softened
  2. ¼ cup dextrose
  3. ¼ cup Rice Malt Syrup (RMS)
  4. 1 ¼ cups plain flour
  5. 3 tablespoons cocoa powder, sifted
  6. 2 cups Weeties (or 6 crushed Vita Brits or Weetbix)
  7. walnut halves to decorate
Instructions
  1. Preheat oven to 170°C and grease two oven trays or line with silicone baking sheets or baking paper.
  2. Beat butter, dextrose and RMS together until light and fluffy.
  3. Add flour and cocoa powder and mix until well combined.
  4. Gently mix through the Weeties, trying not to crush them too much.
  5. Drop heaped teaspoonfuls of mixture onto oven trays in rows, leaving space between the biscuits. The mixture should stay in little mounds but if necessary, press mixture together slightly as they will spread a little as they cook.
  6. Bake for 10-12 minutes. They will harden as they cool, so don’t be tempted to keep cooking them.
  7. Once cooled, ice with chocolate icing. If you like walnuts you can top each one with a halved walnut also.
